2023 Chenin Blanc

This wine is made from fruit from Mystic Park, Swan Hill. The climate is warm without being hot and its limestone soils reveal the best characteristics of this variety. Destemmed, pressed and wild fermented into oak barrels of various sizes with 30% new oak, 100% went through wild malolactic fermentation. Aged in a mixture of puncheons and barriques, 20% of which were new for 12 months, bottled unfiltered, unfined. Enjoy the bouquet of dry hay, green apple, grapefruit pith, lemon and lanolin while the palate has medium weight with beautiful length and persistent acidity.
